A hearty chicken salad with nutty quinoa, fresh strawberries, and creamy avocado. Paired with a thick and sweet Greek yogurt poppy seed dressing, this salad will be your go-to this summer season!

Ingredients

1 cup cooked quinoa

8 oz cooked chicken breast, cut into cubes or strips

½ cup sliced fresh strawberries

50 grams (about ¼ of a medium avocado) avocado, cubed

Fresh greens (lettuce, spinach, or kale)

¼ cup non fat Greek yogurt

½ of a lemon, juiced

1 tablespoon poppy seeds

1 teaspoon sugar

Instructions

In a large bowl combine quinoa, chopped chicken, sliced strawberries, cubed avocado, and greens. In a small bowl, mix Greek yogurt, lemon juice, poppy seeds, and sugar until everything is incorporated. Drizzle dressing over the salad and enjoy!
