Swole Elvis Pancakes

Swole Elvis Pancakes

Elvis Presley’s favorite combination of peanut butter, banana and bacon sandwich (typically known as a “Fat Elvis”) is transformed into a sweet and salty stack of protein pancakes. You can practically picture a jacked up Elvis Presley enjoying this dish!

Macros for whole recipe: Protein 52g, Fat 17g, Carbs 88g, Fiber 9g, Calories 705

Ingredients:

1 slice bacon, diced (I used Pure Farms thick Applewood bacon)

1/2 Cup All Purpose Flour

1 egg

1 Cup 2% Low Fat Cottage Cheese

1 teaspoon cinnamon

3 Tablespoons Splenda

1 teaspoon baking powder

1/4 teaspoon baking soda

1 banana, sliced

4 tablespoons PB2 Powdered Peanut Butter mixed with 2 tablespoons water

Instructions:

1. In a blender or food processor, blend all the ingredients except for PB2, bacon and banana until the batter is smooth.

2. Heat a griddle or nonstick skillet over medium heat. Spray with nonstick cooking spray.

3. Cook diced bacon until crispy and then set aside.

4. Using the same skillet, drop about 1/3 Cup of batter onto the hot griddle/skillet and cook pancake for about 2 minutes (or until it’s gold on the underside and it’s beginning to set). Flip pancake and cook for another 2 minutes. Repeat until all the batter is done.

5. Stack pancakes by putting the sliced bananas in between layers. Stack the top pancake with the PB2 and cooked bacon bits. Serve with sugar free maple syrup or real maple syrup (if your macros allow!).
